The best agaves are selected after cultivation and cooked in traditional cone-shaped wood ovens. The wood is lit and volcanic rocks are placed on top of it in a pyramid shape, the oven is covered with cloth and earth and cooked for 3-5 days. Once cooked, the pinas are milled with a stone and kept in a wooden tub for fermentation. 400 Conejos Joven is double distilled and has slight smokiness on the palate.

Mezcal BRIJ3 was born through an effort to embrace the customs and traditions of Oaxaca, and the artisans of San Martín Tilcajete, known as "the place where the Alebrijes are born."Each bottle is hand painted by the regional artists of San Martín Tilcajete, with their own designs and colours, making each bottle unique to itself. Distilled from wine made from neutral Pisco grapes. It is double distilled, triple filtered, and stored in stainless steel tanks. Slightly sweet with a bit grassiness.

Some dried figs & raspberry appear while the tannins are ripe & integrated. The wine is dense and concentrated with good length & the capacity to improve over the next 3-5 years.

The palette shows red cherry, raspberry and a touch of allspice. A well-integrated oak backbone is backed by fresh acidity together with soft tannins imparting excellent structure and long finish.
