This sparkling wine is vinified from the Pinot Noir varietal. It offers all the delicacy of red fruits and flowers with good structure at the mid palate and no tannins.

This expression has spent up to 18 months finishing in Caribbean rum casks. The mingling of raw, spicy and earthy rye with the mellow sweetness of rum finishing creates an incomparably smooth whiskey. Our Merlot Les Jamelles is a very complex, rich, long and fat wine. With its dark colour, it displays aromas of crushed black fruits (blackberries, black currants, and cherries), jam and cooked fruits as well as smoky scents (peat) and spicy perfumes (cinnamon, thyme). This wine is round, rich and long-lasting on the palate with mature tannins on the finish. It is a well-balanced easy-drinking wine.

On the palate, this wine is complex, rich, long and fat. It displays aromas of crushed black fruits (blackberries, blackcurrants, cherries) and jam. The tannins are plump and well-integrated. Unlike many Pinot Noirs grown in the Pays d'Oc, this wine is not dominated by heaviness or an excessive over-ripeness.

Copper in colour, this bourbon has a deeply mellow, richly flavourful, medium-bodied taste with a delicious caramel aroma full of fruit and vanilla.

Pale pink with lychee highlights. The succulent nose expresses intense grapefruit and red berry fruit aromas. On the palate, the attack is forthright and highly expressive, marked by the grapefruit notes found on the nose. Fresh, red berry fruit flavours then emerge on the close-knit, refined mid-palate, lingering on the fresh and elegant finish.

Basil Hayden's is a singular bourbon that bridges the flavour of rye whiskies and small batch bourbons together. Basil Hayden toast is dark amber in colour with aromas and flavours of toasted oak that are complemented by dried fruit and caramelized sugar.

This expression was created from a mash that by law had to be no lower than 51% rye; following distillation it was aged in new charred oak barrels for 10 years. The result is aromas of sweet vanilla, oak and a touch of light fruit are followed by the taste is of spice, oak, hints of caramel, tobacco and warm cinnamon.

Beau Joie Brut is aged on lees for a minimum of 4 years. When Beau Joie Brut is disgorged, we add a very small amount of dosage to each bottle in order to highlight the fruit characteristics, while preserving lovely acidity and citrus notes.

Blade and Bow Kentucky Straight Bourbon Whiskey uses a unique Solera System aging process to preserve some of the distillery’s oldest whiskey stocks. Aged in new charred American white oak barrels, this bourbon has a subtle aroma of fresh fruit and a taste that includes hints of dried apricot, ripe pear and a sweet roasted grain. The finish has notes of charred oak and warm winter spices.

Pinot Noir and Chardonnay grapes were vinified exclusively in barrels. Riddled and disgorged by hand. To the eye gold glints. Initial aromas of cherry and lemon mingle with quince and bergamot are followed by notes of hazelnut and almond, peach and mirabelle plum. On the palate a fine and intense effervescence in balance with delicate acidity. As the wine unfurls, a delicate minerality and the complex flavours of orchard fruit and citrus.

Only two Chartreuse monks know the identity of the 130 plants, how to blend them and how to distill them into this world famous liqueur. They are also the only ones who know which plants they have to macerate to produce the natural green and yellow colours. And they alone supervise the slow ageing in oak casks.
