The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

This Five Oak Cask Release is matured in a combination of three different types of virgin oak (Irish, European and American), in addition to ex-bourbon and ex-sherry casks. The finished result is a whiskey that is equal parts complex and smooth.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. Aromas of biscuit and peppery spice. Las Lamas comes from 3 plots, between 60 and 100 years, situated on the same estate. The vines grow on steep slopes and on slate soils, cultivated following the principles of Biodynamic agriculture. The winemaking process is carried out in large wooden vats, without large extractions and treading the grapes with a press, allowing them to ferment with native yeasts. The wine is then decanted into French oak barrels, where it undergoes malolactic fermentation and is then aged.

Cherry red very covered, still with youthful edges. In the nose it is expressive, intense and rich in nuances. The identity of the vintage stands out in the form of liveliness with the characteristic complexity of this hawthorn, which has found in this vintage a new occasion to express the best of itself. Deep black-cherry colour, almost opaque. Very elegant, complex nose, with aromas of black fruit and lots of spice. It is smooth and round in the mouth, with tannins which are firm, yet silky and very sweet and which envelop the whole palate. The finish is lingering, fresh and balanced with a hint of fine elegant tannins.

Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. Herbs and spicy flavours are complemented by a touch of cedar wood for extra complexity.

El Buen Alfarero translates as "the good potter", this artisanal wine is unique and no two bottle are exactly alike as they are dressed by hand. This blend of 95% Tempranillo and 5% Albillo has been aged for 7 months in earthenware jars called "tinajas", just as it would have been over 100 years ago. It is bright, dark-hued purple-red with intense bluish notes. the nose is bold with outstanding red fruits. In the mouth it is elegant, fresh, and tasty with mineral notes combined with red and dark fruit. Round velvety tannins lead to a soft subtle finish.

First fruits of Alvaro Palacios' labours to restore Rioja Baja's traditional Garnachas to glory. Bush vines, grown at 615m, at the limit of ripening. Shallow red clay soil over calcium carbonate. Álvaro Palacios Quiñon de Valmira 2015 is a pale garnet colour with gloriously floral aromas. Equally seductive palate superbly ripe with a lift of orange peel and grain of dark chocolate. Very refined; Pinot-like. A great beginning; a vineyard to watch.
