Oyster Bay Marlborough Chardonnay truly captures the character of Marlborough with pure, incisive, ripe fruit flavours. A combination of barrel and tank fermentation and the stirring of lees on oak, achieves maximum softness and integration. To retain all the natural assertiveness and flavour, no malolactic fermentation takes place. Clonal influences in the vineyard have been very important, providing smaller berries and enhanced flavour intensity. The result of all of this is a delicious Oyster Bay Marlborough Chardonnay with concentrated aromas and flavours of ripe citrus and stonefruit, balanced with subtle oak, and a creamy texture to finish.

Oyster Bay Sparkling Cuvée Brut is made from 100% Chardonnay grapes which give the wine elegance, finesse and minerality. We harvest the fruit early and use neutral yeasts to accentuate the Chardonnay varietal character. The key to the intense flavours and spicy aromas in this wine are the mature grapes and modern technology which allows for strict temperature control during fermentation: its gentle agitation of the wine extracts more colour and tannin from the skins, and the partial pressure this vessel is under during the time of fermentation allows higher concentration of fruit flavours to remain in the wine. Finally, this wine undergoes malolactic fermentation in the barrel room, which stabilizes its red colour and enhances its firm tannic finish. This Cabernet Franc is best served with pasta or red sauce, barbecued foods, roast beef or lamb.

It is an ideal balance of cool-climate acidity with a fragrant orchard fresh aroma and a delicate peach bouquet. It makes a perfect complement to appetizers, seafood, cheese and light meats"
