Each bottle of 1792 Ridgemont Reserve is handcrafted in small batches and aged 8 years in new charred oak barrels. The result is a distinctively smooth pour, equally worthy of rare occasions and everyday enjoyment.

The distinct character of the Aberfeldy 12 is the result of uniting the Highland's finest natural resources. Created with fresh spring water from the nearby Pitilie Burn, they are truly "Scotch" Scotches, as only Scottish Optic Barley is used. Colour: Full, gold yellow. Nose: Floral, light smoke, nutty, orange zest. Palate: Fresh, hint of sweetness, honey, oak, citrus. Body: Full bodied. Finish: Long, subtle vanilla, soft oily, subtle sweetness.

Colour Burnished gold Nose At bottle strength the influence of the two styles of maturation casks complement each other producing a full-bodied smooth aroma. The maturity that shows through comes from the America barrels and the spicy creamy nose from the old style smaller casks. A touch of water allows the full complexity of the Highland Peated Malt to appear. The rich softness linked with smooth, slightly dry aroma is combined with just enough earthy peat smoke to avoid being overpowering. Palate At bottle strength the full rich flavours burst and fill the mouth with a creamy peat tang and a touch of vanilla’s soft gentleness. If a touch of water is added then the flavours increase with the addition of a sweet ripe fruit start followed by the tang of peat.

This expression was created from a mash that by law had to be no lower than 51% rye; following distillation it was aged in new charred oak barrels for 10 years. Blade and Bow Kentucky Straight Bourbon Whiskey uses a unique Solera System aging process to preserve some of the distillery’s oldest whiskey stocks. The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

We use casks that once contained premium Caribbean rum to finish our 21 Year Old expression. This expression spends four months finishing in Gran Reserva barrels selected by our Malt Master, adding to its distinctive and complex flavour. Project XX embodies the warm, fruity character of classic Glenfiddich Whisky with hints of apple blossom, summer fruits and ripe pear. Its multiple personalities are revealed with hints of sweet candyfloss, cinnamon spice, almonds and rich port tannins.

The Glenmorangie 14 Year Old Port Cask Finish has been matured in American White Oak ex-Bourbon barrels before being extra matured in specially selected Ruby port pipes from the Quintas, or wine estates, of Portugal. Extra maturation is a wood finishing technique pioneered at the Glenmorangie distillery. Wood finishing in these port pipes develops Glenmorangie Quinta Ruban into a voluptuous spirit with a complex balance of sweet and dry flavours.

Balanced aromas of green apple, blossom and soft vanilla oak enveloped in a gentle sherry spiciness. On the palate, an immediate oaky vanilla sweetness is counterbalanced with rich malty notes. The finish is sweet with a hint of woody spice.

Grants Triple Wood 12 YO is matured in three types of casks. Vibrant with aromas of fruit (blackcurrant and peaches) balanced with a sweet, vanilla maltiness. The taste is sweet and rich with a lovely mix of vanilla, honey and spice; the finish is long, soothing and warm and a vanilla maltiness rounds out the finish.

Gray Jay is hand crafted in small batches by a craft distiller in Niagara Falls. With notes of vanilla and caramel, it's sweet, smooth and complex flavour is designed to be approachable.

Fresh aromatic oils and spices with orchard fruits and barley on a background of toasted wood. Full spicy body with a hint of cloves along with the fruity sweetness of green apples rounded off with toasted oak. Finishes with lingering flavours of spices and barley.

Colour: Amber. Nose: Rose, hint of rosemary, mature woodiness, sandalwood. Palate: Honey-like sweetness, candies orange peel, white chocolate. Finish: Subtle, tender long finish, with a hint of Mizunara (Japanese Oak).
