Each bottle of 1792 Ridgemont Reserve is handcrafted in small batches and aged 8 years in new charred oak barrels. The result is a distinctively smooth pour, equally worthy of rare occasions and everyday enjoyment.

Inspired by Canadian tradition, this product is a unique blend of Canadian whisky and pure premium maple syrup. Caramelized notes are in balance with a distinct hint of rye. The mouth feel is balanced, flavourful, complex and smooth.

Nose: Aromatic, toffee, fruit salad, lush nectarine, custard. Floral, apple blossom, honeysuckle. Apple peels, pear, touch of smoke. Palate: Malty. Gentleman Jack is charcoal mellowed before going into the barrel. It receives an additional “blessing” when it is charcoal mellowed again after reaching maturity, giving it ultimate smoothness. Gentleman Jack is full-bodied with fruit and spices, and its finish is silky, warm, and pleasant.

The taste is balanced between honey, malt and flowery scents. Dates and figs emerge in the background with a hint of wood smoke. The finish is long and enticing with the sweetness of dried fruit and subtle dryness of Oloroso nuttiness.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. Aromas of biscuit and peppery spice. Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. With a rye content of 95%, well past the 51% required for the category, we’ve recreated the classic American whiskey that ruled our glasses before Prohibition. Aromas and flavours include citrus, toasted oakn a bit of spice and mint.

An ode to the great outdoors, Tincup is a blend of two great American whiskeys, "high rye" bourbon is blended with a small amount of Colorado single malt whiskey and cut with rocky mountain water. Aromas of dry winter spices, toasted brioche, with a flavour that is semi-sweet, dry raisin, apples, and cinnamon with a spicy finish. Enjoy on the rocks or in a cocktail.

Five sources of flavour have been customized for this craft bourbon. The first includes mineral rich iron-free water. The second ingredient is a unique grain recipe including corn, malted barley and rye which gives it its feisty spice character. The third is our unique cypress fermenters, the fourth is we distill in our customized copper pot stills, and lastly we mature in our own white oak barrels.
