Basil Hayden's is a singular bourbon that bridges the flavour of rye whiskies and small batch bourbons together. Basil Hayden toast is dark amber in colour with aromas and flavours of toasted oak that are complemented by dried fruit and caramelized sugar.

This expression was created from a mash that by law had to be no lower than 51% rye; following distillation it was aged in new charred oak barrels for 10 years. The result is aromas of sweet vanilla, oak and a touch of light fruit are followed by the taste is of spice, oak, hints of caramel, tobacco and warm cinnamon.

The maple smoked sea salt is less bitter and less salty than usual sea salt with a smoky, savoury zing and an almost sweet but briny taste.

We start with corn grains and after multiple distillations we put the liquid into charred used bourbon barrels. After 20 years we have drawn and blended from our cherished reserves, we then age a further 6 months in sherry barrels and create a smooth, luxurious depth of flavour rich in oak, spices, and a light fruit sweetness.

We took the flavours of sweet chocolate chip cookie dough and mixed them in with our aged whiskey.

Made from 100% Canadian Rye, Pendleton 1910 is aged for 12 years in American Oak barrels. A little spiced rum opens up the nose with gorgeous hints of date and walnut cake, a little honeyed oiliness, a dusting of cocoa and lush crystallized ginger. The mouth feel is delicately vinous, in true Balvenie style, the palate holds winter spice and salty butter pastry with a sweet vanilla and melted cookie dough ice-cream. The finish is tight and swift, the bourbon oak notes fading out with added toasty vanilla.

Smoothness allows full enjoyment of the flavour of the whisky, because no single part of its characters overwhelmed.

To the nose, lemony citrus with hints of green apples, vanilla/sugar. The taste & the finish are bitter, bitter almond, malty oak. The finish fades to bitter notes of fresh oak. Young whiskey, light and straight forward. Would probably be a very good whiskey to incorporate marmalades recipes.

Clear, pale straw golden. Pita bread maltiness with white fruit, hints of subtle peatiness and floral honeysuckle. Toasted bread maltiness, succulent pear and crisp apple fruit with just enough charcoal and peaty smokiness and dry nutty wood. More dry nutty notes emerge with subtle lingering peat smoke. Wonderfully rounded and flavoursome.

Matured in a combination of Bourbon barrels and Portuguese Port pipes. Aromas of honeydew melon, red berries and baked apples. Rich toffee, butterscotch. Sweet honey and bitter dark chocolate. On the palate fruits and nuts. Fresh peaches, apricots, mango and plum. Gentle hints of mixed walnut and pecan. The finish is smooth fruit salad which lingers on the palate.
