The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

This wine has a light straw colour in the glass with moderate viscosity. The nose shows notes of mango, peaches in syrup and pineapple. The palate is medium sweet but not cloying with flavours of ripe pear, golden delicious apple, peach and pineapple.

On the nose, a complex of aromas including anise, cut grass, white flowers and lime citrus mingle seamlessly. Dry and full bodied, the palate is very intense and well extracted, with great tension between acidity and richness on the attack and in the middle. Crisp yellow plum, Granny Smith apple and green melon flavours are present throughout, and carry on to the finish alongside mouth-watering acidity and crushed-stone minerality.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. Aromas of biscuit and peppery spice. The Cabernet Franc Icewine has a rich, aromatic nose of strawberry, cranberry and cherry. The palate has deeper, more complex flavours of pepper that balances the sweetness. This sweet wine is well balanced with good acidity in the finish. Serve chilled to approximately 12C. Food pairing: This rich Cabernet Franc Icewine is excellent on its own to complete any meal! If you are pairing it with food, try it with a fresh strawberry tart, cherry cheesecake or chocolate mousse.

Aromatically a complex interplay of nutty maltiness, woodland fragrances and spice, with hints of honey and vanilla. On the palate a distinctive mellow maltiness, a touch of sweet oil, spiciness - and again those background notes of honey, vanilla, toasted wood. On the finish the sweetness gently fades, mellow maltiness and mild woody notes linger.

The key to the intense flavours and spicy aromas in this wine are the mature grapes and modern technology which allows for strict temperature control during fermentation: its gentle agitation of the wine extracts more colour and tannin from the skins, and the partial pressure this vessel is under during the time of fermentation allows higher concentration of fruit flavours to remain in the wine. Finally, this wine undergoes malolactic fermentation in the barrel room, which stabilizes its red colour and enhances its firm tannic finish. This Cabernet Franc is best served with pasta or red sauce, barbecued foods, roast beef or lamb.

You will find very ripe, plummy-sweet flavours and richness in this wine. Some would also call it a bistro style, "elbows-on-the-table" wine. Great with stews, red meat or tomato-based dishes.

Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. Herbs and spicy flavours are complemented by a touch of cedar wood for extra complexity.
