This wine is aged in American oak barrels for 24 months and then for an extended period in bottle. The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. Aromas of biscuit and peppery spice. Cherry red in colour with a medium-to-high intensity. Clean, striking and brilliant. Fruity notes of blackberry and redcurrant. It's ageing in the bottle adds impressions of spice. In the mouth it displays a mature tenacity in balance with the acidity. Likeable, with just the right harmonious vivacity from start to finish. Finally it offers razor-sharp dairy notes and impressions of liquorice.

Cedar, tobacco and spice hints frame dried cherry, berry and vanilla notes in this silky red. The flavours mingle nicely, framed by juicy acidity and light but firm tannins. The wine has a lovely weightless intensity. A fine example of the traditional style.

Las Lamas comes from 3 plots, between 60 and 100 years, situated on the same estate. The vines grow on steep slopes and on slate soils, cultivated following the principles of Biodynamic agriculture. The winemaking process is carried out in large wooden vats, without large extractions and treading the grapes with a press, allowing them to ferment with native yeasts. The wine is then decanted into French oak barrels, where it undergoes malolactic fermentation and is then aged.

Garnacha Tintorera is known for its deep colour and here it coats the glass and imparts aromas of brooding black fruits, licorice, expresso and pepper. Dense, savoury and rich.
