The maple smoked sea salt is less bitter and less salty than usual sea salt with a smoky, savoury zing and an almost sweet but briny taste.

This whisky is aged for 18 years in barrel, including 10 months in Brandy Casks. Very aromatic with notes of caramel, blueberry compote, raisins, dates and figs. On the palate caramel, corn syrup and blueberry compote; well grilled flapjacks, crispy bacon and butter syrup. The finish is rich and long, spicy and toasty.

This whisky is finished in heavily charred barrels giving it a deep amber colour. Aromas include: tree fruit, pear, apple, sourdough rye, honey, vanilla, and oak wood. The body complex with flavours of rye spices, white pepper, clove, walnuts, toasted sugar and charred wood. Long smooth finish.

We start with corn grains and after multiple distillations we put the liquid into charred used bourbon barrels. After 20 years we have drawn and blended from our cherished reserves, we then age a further 6 months in sherry barrels and create a smooth, luxurious depth of flavour rich in oak, spices, and a light fruit sweetness.

This whisky has a light ruby red colour, with a complexity of sweet dried fruits, underlying peppery spice and subtle toffee notes on the nose. The body is full and robust with a well-balanced blend of sweet port, dried fruits, vanilla, toffee, and lingering rye spices.

Crafted in our signature Signal Hill Whisky style using only the highest quality corn and barley, our spirits are aged in three barrel types: Canadian-whisky, new white-oak, and bourbon. This expression offers characteristics of honey, vanilla, dried fruit, and spice. Savour the richer and bolder mouthfeel and finish.
