The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

Bushmills 12YO old is 100% malted barley, triple-distilled, then aged for 10 years individually in seasoned bourbon barrels and sherry casks before being married into an extremely smooth whiskey. Floral and fruity with a drop of pear and pineapple, and a distinct nutty malt character.

These Riesling vines grow in a stony, shallow blue slate soil which gives the wine a delicate, fresh acidity that perfectly balances the peach and lemon notes.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. Aromas of biscuit and peppery spice. Well balanced flavours of fruit and mild spice. Smooth finish.

It has a bold and spicy finish with a touch of peat.

Typically Mosel, light, easy and refreshing, with beautiful fresh fruit aromas. Lovely on its own, but also marvellous with poultry or sweet and sour Chinese dishes.

Monkey 47 is a batch distilled and handcrafted gin from Germany’s Black Forest, and was created with the use of 47 ingredients. Clear with a silvery, glycerous appearance. Crisp and fresh on the nose. The initial perfumed burst is of sweet berry / juniper and assorted fresh citrus peel; further aeration releases pine needle, lavender and clove-like scents.

Brilliant pale lemon. Pronounced youthful citrus, apple and floral nose. Refreshingly low in alcohol, off dry balanced by crisp acidity. Delicious with salads, chicken dishes and Asian cuisine, and ideal on its own as an aperitif.

Aromatically a complex interplay of nutty maltiness, woodland fragrances and spice, with hints of honey and vanilla. On the palate a distinctive mellow maltiness, a touch of sweet oil, spiciness - and again those background notes of honey, vanilla, toasted wood. On the finish the sweetness gently fades, mellow maltiness and mild woody notes linger.

Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. Herbs and spicy flavours are complemented by a touch of cedar wood for extra complexity.

Founded by CEO Connor McGregor, the name from the district of Dublin he grew up in. It's a blend of triple distilled single malt, Irish grain spirit, and matured in bourbon barrels. Full of aroma and flavour, Redbreast 12 Year Old benefits from a strong contribution from distillates that have matured in Oloroso sherry casks, giving it its trademark Christmas-cake character.

This whiskey has been triple distilled and then matured in the finest bourbon, sherry and ruby port casks for no less than 27 years. A succulent aromatic medley of exotic fruits, mango, pineapple, blood orange, and ripe red berries are complemented by fresh herbs, aromatic oils and wood spices. Vanilla sweetness and treacle toffee add to the richness, while walnuts and toasted oak acknowledge the contribution from a supreme cask selection. Bernkasteler Badstube Riesling Beerenauslese smells of liqueur-like, jellied, vanilla- and chocolate-covered purple plums and black cherries. The implosive palate concentration though is simply beyond “liqueur-like” and into realms I can’t recall. Strong brown spices, herbal concentrates add complexity and a buttery, creamy texture does not prevent this wine from preserving the most remarkable clarity of jellied pit fruit concentration, photo-electric brilliance of fruit acids lighting the way to an endless finish.

White wine with a fruity nose and well balanced residual sugar content. Fragrant, tropical fruit notes with citrus flavours and a medium finish.

Spice and fruit notes mingle with an underlying sweet nose. Strong spice at the start developing into lush red berries, with drying tannin effect at the end. Dry finish dominated by wood and spice.

An ode to Donegal whiskeys of days gone by, the Legendary Silkie is a beautifully balanced blend of the finest double and triple distilled single malts and grain whiskeys. Non-chill filtered, and incredibly soft with a stunning natural sweetness. The 2% peated malt in the blend adds a kiss of peat smoke.

Nose: At first honeyed malt, nuts and dark chocolate followed by marzipan, all spice and fruits. Taste: Clean and mellow honey malt and then the taste complexity reveals itself - rich dried fruit, spices, nuts and sweet oils. Finish: A pleasant gentle wood with honey sweetness fading slowly.

To the nose, lemony citrus with hints of green apples, vanilla/sugar. The taste & the finish are bitter, bitter almond, malty oak. The finish fades to bitter notes of fresh oak. Young whiskey, light and straight forward. Would probably be a very good whiskey to incorporate marmalades recipes.

A wonderful blend of Single Pot and Single Malt whiskey with aromas of apple and hints of vanilla. Gently spiced with ginger and orchard fruit flavours followed by a long and elegant finish that highlights notes of dark chocolate.

Nose: Mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil and green tea. Sweet honey and peaches from the Malaga casks. Taste: Honey sweetness with pot still spices. Sweetness throughout, with a mix of red grapy and dry barley upon exit.
