The vines are grown on low-vigour, stony, clay-rich soil, in a cool maritime mesoclimate. It is named after Bob Dylan's famous “Bootleg Series” of albums and it invites people to experience the art of craft whiskey on a new level. This 15 YO Straight Bourbon Whiskey has been finished in Jamaican pot still rum casks. On the nose: cornbread, cocoa nibs, tobacco leaf, and an abundance of maple syrup. The palate delivers dried apricot, and sandalwood, with a nutty richness and a finish of toasted coconut, holiday spice, and toasted oak.

Aged in special barrels which expose the whiskey to a greater percent of oak surface. Rich tasting with notes of caramel, oak and spice.

A blend of Bonded American Malt, Rye and Tennessee Whiskies. Notes of honey, malt and soft oak, leading to a long lasting and well - rounded finish.

Nothing brings - out the sweetness of watermelon like a little sprinkle of salt. We took this mouth - watering, salty - sweet combo and added it to Ole Smoky Whisky.

In our pursuit of an authentically American single malt whiskey, we bring our signature five-malt barley bill together with new American oak casks. This combination produces a dramatically different whiskey from what is now commonplace and expected in the single malt category. But just as traditional styles of single malt from Scotland emerged as a reflection of regions such as Islay and Speyside, so too does our American Oak stay true to the provenance of our Pacific Northwest home.
