The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

Knappogue Castle 12 YO is an exceptional single malt made exclusively from malted barley. Triple distilled one batch at a time in traditional, onion-shaped copper pot stills, the whiskey is then aged in bourbon oak casks for twelve years. Aromas of biscuit and peppery spice. Aromatically a complex interplay of nutty maltiness, woodland fragrances and spice, with hints of honey and vanilla. Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. This is a blend of 70% Single Malt and 30% Single Pot Still whiskeys. Zesty spice aromas, with black pepper and peach notes. The pot still spice comes through on the palate, with dark chocolate and bourbon oak notes. The finish lingers pleasantly with hints of oak and butterscotch.

An ode to Donegal whiskeys of days gone by, the Legendary Silkie is a beautifully balanced blend of the finest double and triple distilled single malts and grain whiskeys. Non-chill filtered, and incredibly soft with a stunning natural sweetness. The 2% peated malt in the blend adds a kiss of peat smoke.

Nose: At first honeyed malt, nuts and dark chocolate followed by marzipan, all spice and fruits. Taste: Clean and mellow honey malt and then the taste complexity reveals itself - rich dried fruit, spices, nuts and sweet oils. Finish: A pleasant gentle wood with honey sweetness fading slowly.

To the nose, lemony citrus with hints of green apples, vanilla/sugar. The taste & the finish are bitter, bitter almond, malty oak. The finish fades to bitter notes of fresh oak. Young whiskey, light and straight forward. Would probably be a very good whiskey to incorporate marmalades recipes.

In our pursuit of an authentically American single malt whiskey, we bring our signature five-malt barley bill together with new American oak casks. This combination produces a dramatically different whiskey from what is now commonplace and expected in the single malt category. But just as traditional styles of single malt from Scotland emerged as a reflection of regions such as Islay and Speyside, so too does our American Oak stay true to the provenance of our Pacific Northwest home.
