This expression has spent up to 18 months finishing in Caribbean rum casks. The mingling of raw, spicy and earthy rye with the mellow sweetness of rum finishing creates an incomparably smooth whiskey. Aromas of citrus, caramel candy, maple sugar, vanilla, oak, hazelnut, spice and sherry wood. On the palate: sweet rum, sherry wood, and soft oak. A sweet/dry finish.

Ripe berry flavours with notes of white chocolate, black olives and white pepper provide plenty of mouth filling satisfaction. Tannins are robust and smooth adding roundness and complex elegance to the lingering finish.

Blackened Whisky started as a collaboration between Master Distiller Dave Pickerell and Metallica, but when Dave passed away in 2018, Master Distiller Rob Dietrich joined the team in 2019 and now oversees the Blackened American Whiskey distilling process. A blend of hand-selected, well-aged North American bourbon & rye whiskeys, uniquely finished in black brandy casks and the earth-shattering music of Metallica. Each batch of whiskey is blasted with it's very own Metallica playlist, curated by the band themselves. Burnt caramel, oak and honey on the nose along with notes of cinnamon, allspice, dark fruit, clove and mint. The finish is long and smooth with a taste profile that is slightly creamy with hints of butterscotch, toffee and maple.

Typical aromas and flavours of Cabernet Sauvignon, with pronounced accents of black pepper and blackcurrant. Fleshy, with fine tannins and elegant structure as well as a pleasant, lingering finish. Great with Portobello mushroom burger or lamb chops.

Flume Crossing Sauvignon Blanc is pale straw yellow in colour and offers bright aromas of tangerine, passion fruit, mango, daffodil and green pepper. These complex aromatics are found on the palate as well with key lime and refreshing acidity.

We took the undeniably delicious flavours of butter, cream, toasted pecans, and caramel and blended them all up with Ole Smoky moonshine. The result was nothing short of heavenly.

Soft and silky, with lingering floral and crushed pomegranate aromas, this medium bodied wine was aged for 11 months in small French oak barrels, which added a hint of toasty vanilla and spice complexity.
