Brennivin is a caraway flavoured aquavit (un-sweetened schnapps) and is the countries signature spirit. Introduced in 1935, Brennivin is made from the extraordinarily pure Icelandic water imparting it with deliciously sweet taste and a soft finish. Have no doubts however this is an aquavit, and Brennivin has the right level of intensity with notes of caraway seeds. On the nose you'll find a pleasant molasses aroma coupled with some fruit-think ripe cherries and apples. Some oak notes are also found, but in more of a supporting role. The rum is rather elegant on the palate and is neither drying or oily. It's modestly sweet and has a nice tang to it which helps to balance the flavours. The finish also shows more influence of the oak offering up a bittersweet finish.
