The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

Bushmills 12YO old is 100% malted barley, triple-distilled, then aged for 10 years individually in seasoned bourbon barrels and sherry casks before being married into an extremely smooth whiskey. Floral and fruity with a drop of pear and pineapple, and a distinct nutty malt character.

Matured in top quality edition Oloroso sherry casks, Kavalan Solist Oloroso Sherry is bottled at the distillery, without any colouring or chill-filtration. Vinho is fully matured in used American oak wine barrels that have been toasted and re-charred in a way that brings out fruity vanilla notes from the wood into the whisky overlaid on a delicate background of complex fruitiness. It has a complex and multi-dimensional background of pepper, spice, dates and other fruits, such as ripe melon and mango together with kiwi and a delicate blend of bursting citrus fruits. A rich fusion of vanilla and caramelized sugars with dark chocolate on top. Pepper is also present in the background waiting to be noticed. This bouquet is simply a sensational feast to your olfactory organ.

Triple distilled, and aged in American oak Bourbon casks and Oloroso Sherry casks. Ripe and fruity aromas with luscious peach, dried apricot and tropical fruit notes with additional hints of orange blossom and vanilla fudge. Vanilla sweetness, granola, toasted almonds and honey, a little oak, digestive biscuits, apricots, and a hint of cocoa flavours fill the mouth. An ode to Donegal whiskeys of days gone by, the Legendary Silkie is a beautifully balanced blend of the finest double and triple distilled single malts and grain whiskeys. Non-chill filtered, and incredibly soft with a stunning natural sweetness. The 2% peated malt in the blend adds a kiss of peat smoke.

Nose: At first honeyed malt, nuts and dark chocolate followed by marzipan, all spice and fruits. Taste: Clean and mellow honey malt and then the taste complexity reveals itself - rich dried fruit, spices, nuts and sweet oils. Finish: A pleasant gentle wood with honey sweetness fading slowly.
