Caymus has a signature style that is dark in colour, with rich fruit and ripe, velvety tannins as approachable in youth as in maturity. We farm Cabernet grapes in eight of Napa’s 16 sub-appellations, with diversification enabling us to make the best possible wine in a given year. Our Cabernet offers layered, lush aromas and flavours, including cocoa, cassis and ripe dark berries.

Suisun (su-soon) Valley is known for delicious stone fruits and walnuts; increasingly it is also gaining recognition for its wine. Durif is synonymous with Petite Sirah, the widely grown grape in the region. We added Grand to the name of our Suisun-grown Durif because it has a grand style. The 2016 vintage shows aromas of dark plums,  baked blueberries, scents of lavender, white rose petals, sweet smoke and brown spice.  On the palate, lush tannins in balance with dark berry cobbler and cocoa.

Chocolate Shop marries fine wine and rich, velvety chocolate to create an indulgent wine experience like no other. Inviting aromas of black cherry and dark chocolate entwine and continue on the palate surrounded by hints of cocoa powder. Nuances of red wine and residual sugar linger on the smooth finish.

Cinzano Rosso is dark red in colour and wrapped in intense delicious citrus flavours. Sweet and fragrant it finishes with a unique but pleasant bitter aftertaste.

Taste profile of this Cabernet has dark chocolate covered cherries, blackberries, Mocha and baking spice notes. Full and rich on the palate. Aged 15 months in French and American oak. Pairs with grilled Rib eye or stuffed portobello mushrooms.

This Cabernet Sauvignon opens with concentrated aromas of black cherry and cocoa, with subtle threads of earthiness and cassis. Bright, soft fruit flavours give way to a powerful, finely structured mid-palate. A rich mouthfeel rounds out the lengthy finish.

A sweet but balanced wine with a generous mouth feel. The distinct aroma and flavour of fresh Concord grapes.

Martini Bianco is also the most aromatic of the three. Its nose is intense with a sweet rounded smoothness and the clear presence of vanilla, and on the palate an artful marriage of sweet and bitter, perfectly balanced. Pale straw colour; aromas of pistachio, nougat and marzipan that follow through on to the palate; nutty sweet flavours are balanced with zesty orange and grapefruit notes.

Martini Extra Dry is more highly perfumed and has a more lively personality than Bianco. Aromatization is more assertive in Rosso and the discernible presence of soaked herbs and the perfume clearly influence its taste. Incredible herbal complexity from wormwood and clove, with some honey, freshly cracked black pepper and ripe peaches. Zesty citrus and white flower blossom grows among the green herbal notes, with a balanced and cleansing woody bitterness. A little elderflower and honeysuckle linger on the finish.

A vibrant cranberry hue, this wine features scents of fresh cherry tarte and toasted wood, with a caramelized sweetness of vanilla. The nose is undeniably Santa Lucia Highlands - a wet stone minerality and subtle oceanic character evoke fresh breezes off the Pacific, signaling this wine’s cool coastal origin. Opening texture of slight graphite awakens every part of the palate. Entry is fresh, yet integrated with mouth-filling creaminess. Mumm Napa Brut Prestige opens with gorgeous layered white blossom aromas, followed by creamy vanilla, citrus, stone fruit and melon. Yeast aging contributes subtle aged flavours of biscuit, bread dough, white blossoms and mocha, and layers of creamy texture. The wine is medium-bodied, with elegant acidity, crisp structure, excellent mousse and a rich, lingering finish.

Deep and luring aromas of raspberry and ripe cherry are intermingled with accents of star anise, five spice and freshly steeped black tea. The entry is smooth with a combination of cassis and blackberry with a satiating suppleness. Ultra round and soft, the wine finishes with reverberating length.

Harvest end of September at least 4 months in bottle, intense amber, intense, persistent & well-balanced, rich, soft & sweet. Ideal dessert wine. 18% alcohol per vol. Serving temperature 12-14°C"

Wild Irish Rose is a strong but sweet wine that consistently delivers great taste.

Colour is deep red with purple hues. The bouquet is intense and persistent, fine, slightly spicy. The palate is dry, warm, soft, quite tannic, and tasty.

Amber brown colour with rich copper rim; Complex aromas of marmalade, smoke, burnt sugar, dried citrus peel with hints of raisins, figs and nuts; Medium - sweet, with dried fruit flavours, balanced acidity and a nutty finish.

Villa Antinori Chianti Classico Riserva is a blend of Sangiovese together with other complementary varieties produced as a tribute to Antinori's historic label that has accompanied the family's winemaking traditions over the years. Silky and aromatic, dark red cherry, spice, menthol and leather build into the gracious, persistent finish.
