Comte de Grasse has created an entirely new style of vodka-rosé using an 'innovative' flavour extraction technique. A new process, called active wine extraction (AWX), combines the flavours of rosé wine with vodka. The nose is all elegant and concentrated freshness with light wafts of strawberries. On the nose, the bouquet spirals through sweet, bright floral notes and the lively minerality so typical of Dom Pérignon, then notes of candied fruit, plants, the incredible freshness of camphor leaf and finally the dark hints of spices and liquorice root. On the palate, the wine is currently still physical. It is compelling, tactile and vibrant rather than aromatic. The rhythm and tempo are more dominant than the melody. At first mild and delicate, then strongly, confidently mineral, persistent, precise, with a refined bitterness, and an iodine, saline tang.

Harvest occurs early in the morning and the fruit is then immediately pressed. Fermentation takes place in stainless steel cuves. A low temperature is kept while the wine is raised on fine lees in the cuve for eleven months and then bottled in September. The honey & white acacia blossom perfume is a rare treat. This is a 95% Merlot and 5% Cabernet Franc blend. It has aged for 12 mths in second fill barrels. The nose displays all the subtleties of the great Pomerol wines, mingling aromas of fresh raspberry, blackberry, black pepper, Earl Grey tea and lavender. The silky mouthfeel and lush flavours of red fruit prolong its expression on the palate. Its intensity lingers with hints of spice, liquorice and brown sugar.
