The best agaves are selected after cultivation and cooked in traditional cone-shaped wood ovens. The wood is lit and volcanic rocks are placed on top of it in a pyramid shape, the oven is covered with cloth and earth and cooked for 3-5 days. Once cooked, the pinas are milled with a stone and kept in a wooden tub for fermentation. 400 Conejos Joven is double distilled and has slight smokiness on the palate.

A blend of Syrah, Carignan, Grenache, Marsanne and Roussanne grapes. Granata red color. Distilled from wine made from neutral Pisco grapes. It is double distilled, triple filtered, and stored in stainless steel tanks. Slightly sweet with a bit grassiness.

The Gran Reserva Cabernet Sauvignon has been aged in French oak barrels; it shows deep red purple colour in the glass. Maipo Cabernet is characterized by scents of cassis & mint. Some dried figs & raspberry appear while the tannins are ripe & integrated. The wine is dense and concentrated with good length & the capacity to improve over the next 3-5 years.

Ruby red in color. On the nose intense aromas of cinnamon, black plum and cedar dominate with a hint of orange blossom in the background. The palette shows red cherry, raspberry and a touch of allspice. A well-integrated oak backbone is backed by fresh acidity together with soft tannins imparting excellent structure and long finish.

Brilliant in color, this lively Cenote Blanco tequila is packed with bright citrus and pepper on the nose. Continuous flavor of rich, cooked agave, spices, subtle wood, and green vegetables, are a result of mellowing the spirt in American Oak barrels for three weeks.

Only 100% pure blue agave is used in our Rosa Blanco Tequila. Slow fermented for 48-60 hours and then double distilled in copper pot stills. The tequila is then aged in red wine oak barrels for a short period of time to absorb the colour of the wine casks. Floral notes evolve into unique aromas of strawberry, raspberry, and honey. The 100% Weber Blue Agave piñas are rested (aged) eight months in American oak barrels. This creates an intense amber coloured tequila with silky, rich body. The aromas are woody, fruity, vanilla and toffee/caramel-centric. On the palate, there is a complex blend of wood, fruit, vanilla, toffee, and caramel. The finish is amazingly long and smooth.
