The key to the intense flavours and spicy aromas in this wine are the mature grapes and modern technology which allows for strict temperature control during fermentation: its gentle agitation of the wine extracts more colour and tannin from the skins, and the partial pressure this vessel is under during the time of fermentation allows higher concentration of fruit flavours to remain in the wine. Finally, this wine undergoes malolactic fermentation in the barrel room, which stabilizes its red colour and enhances its firm tannic finish. This Cabernet Franc is best served with pasta or red sauce, barbecued foods, roast beef or lamb.

It is an ideal balance of cool-climate acidity with a fragrant orchard fresh aroma and a delicate peach bouquet. It makes a perfect complement to appetizers, seafood, cheese and light meats"

This wine showcases aromatics in the form of blackberry jam, fresh mint leaf, black pepper, cooked blueberry, black cherry, sweet tobacco (similar to Oscuro Cigars), ripened plum and blackcurrant, with a subtle undertone of butter, courtesy of malolactic fermentation. Once allowed to breathe, notes of leather and cedar become more pronounced, suggesting potential tertiary aromatics. The palate mirrors the nose, with notable flavours of black cherry and blackberry, alongside butter and toasted almond, with a hunt of dark chocolate on the extended finish.

This singular focus means we have the time and opportunity to aim for perfection, to explore the depth and elegance of each ingredient until we arrive at the 'true expression' of the Pilsner style. This Euro-Style Pilsner is golden in colour. It has a sweet malt balance with a refreshing bitterness from the Saaz hops.

The barrel aged Chardonnay follows the guiding philosophy, oak should be to wine as seasoning is to food. Enough to add interest and complexity but not so much that it overwhelms.

A precise seven-barrel blend yields intriguing citrus, green apple and pineapple with butter, honey, lavender and vanilla nuances. The palate has nice weight, yet balanced by lovely cool-climate acidity and seamless oak integration. Yeasty, bready, toasty flavours are felt onto a long, warm finish.

Grilled herb and red pepper aromas mingle with berry fruit on the nose. The palate offers tasty flavours of ripe berry, cherry and plum, the roasted red pepper replaying with a dash of black pepper. This is a flavourful, approachable red, dry, medium bodied with a pleasing round texture, good balance and tasty finish.

This semi-dry, refreshing palate is clean and fruit driven. Lifted aromatics pairing nuances of citrus fruit such as lime zest and white grapefruit with subtle mineral that only bench fruit can create. Citrus and minerality reappear on the palate joined by Granny Smith apple, white peach and honey. Zippy and mouth-watering.
