In our pursuit of an authentically American single malt whiskey, we bring our signature five-malt barley bill together with new American oak casks. This combination produces a dramatically different whiskey from what is now commonplace and expected in the single malt category. But just as traditional styles of single malt from Scotland emerged as a reflection of regions such as Islay and Speyside, so too does our American Oak stay true to the provenance of our Pacific Northwest home.

Bright ruby with a crimson hue. Ripe cherry and black plum fruit flavours supported with savoury oak char and spice. A medium bodied wine with supple tannins and a fleshy, silky texture. The fruit and savoury, game flavours are perfectly balanced and persist on the long, clean acid finish. Will age well with careful cellaring for 3 to 6 years. Great with game meats such as duck or venison.

Mid-straw, with a bright clarity. Vibrant white-currant, nettle, and gooseberry aromas, with a grapefruit core underpinned by some pungent herbaceous, jalapeño flavours. Very sweet oloroso. Dark mahogany, almost ebony. On the nose, dried nuts and faint aroma of raisins, muscatel and toasted sugar. Smooth and velvety with a warm palate owing to its alcohol content. A long finish.
