This wine is aged in American oak barrels for 24 months and then for an extended period in bottle. The 100% Chardonnay grapes were hand-sorted and whole bunch pressed. The wine was 100% stainless steel tank fermented and did not undergo malolactic conversion. The wine underwent weekly lees stirring for three weeks post ferment. The wine was not exposed to oak treatment. No fining.
