The 2010 Cognac cask is a limited edition rare cask finished, non chill-filtered Irish single malt whiskey. After maturing quietly for exactly 7 and a half years in Oloroso sherry butts and bourbon barrels, Helen Mulholland, our Master Blender, finished this whiskey in rare Cognac casks for 2 and a half years. The fruit-rich Cognac imparts mellow dried fruit notes and a spicy vanilla sweetness.

Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Pot Still spice combines with crisp barley character. Delicate herbs give way to green banana and grapefruit while a nutty note of marzipan reflects the wood contribution of specially selected casks. An initial taste delivers smooth mouth-coating barley followed by an eruption of green apple and citrus notes. Herbs and spicy flavours are complemented by a touch of cedar wood for extra complexity.

Aging occurs in in ex-sherry and ex-bourbon casks, and then delicately finished in Mizunara oak casks. Mizunara is one of the rarest and most expensive types of oak in the world, and gives a delicate touch of spicy flavour and sandalwood to this remarkable spirit.
