On the palate, the attack is forthright and highly expressive, marked by the grapefruit notes found on the nose. The 2016 Beychevelle is comprised of 47% Cabernet Sauvignon, 47% Merlot, 5% Petit Verdot and 1% Cabernet Franc. It spent 18 months aging in 50% new and 50% second use barrels. Medium to deep garnet-purple coloured, it is a little broody to begin, opening slowly to reveal subtle savoury notes of dried herbs, charcuterie and black olives before breaking through to a profound core of warm cassis, baked black plums, red currant jelly and candied violets. The palate is medium-bodied and delicately played with a quiet intensity of tightly wound nuances and fantastic freshness, finishing with a lingering savoury lift. This latent beauty will require a bit more time than most 2016's, but it promises to over-deliver to those prepared to wait.

The 2016 blend is 55% Merlot, 35% Cabenet Franc and 10% Cabernet Sauvignon (vines organically certified) picked from the 26th of September to the 15th of October and matured in 60% new oak. Aromas of red and black fruit, with some flint and graphite notes that integrate with black fruit on the palate. This skillfully crafted cognac is aged in French oak barrels. Aromas and flavours include nutty notes, toasted almonds, hints of fruit and even wisps of Jasmine.

Naturally aged for at least four and a half years in the cellars of France's Château de Cognac, where some of the world's finest Cognacs have been made for over 200 years. This emerges as a bold, full-bodied blend that is uniquely powerful and has a pleasantly smooth and balanced finish.

This cuvée made with about 85% Merlot and 15% Cabernet Franc is a blend of different lots reflecting the diversity of all local terroirs: the clay bringing the body, the gravel giving the structure and the chalk ensuring the finesse. The current blend is mainly the 2010 vintage ; the exceptional climatic conditions of this vintage are expressed when tasting the wine which shows a deep intense color, some scents of black fruits (mulberries, cherries) greatly backed up by a lovely integrated tanic structure, this enhancing a long and complex final.

Harvest occurs early in the morning and the fruit is then immediately pressed. Fermentation takes place in stainless steel cuves. A low temperature is kept while the wine is raised on fine lees in the cuve for eleven months and then bottled in September. The honey & white acacia blossom perfume is a rare treat.
