Buttery pastries and brioche develop into aromas of toasted malts and sweet baking spices. The Palate is structured with a full body. Brioche quickly transitions into grassy notes. A slight woodiness balanced perfectly with vanilla and nutmeg. Refined and well-rounded. The finish is sophisticated and subtle. The soft spices and nutty malts balance beautifully leading to slightly sweet notes from the extra old cognac casks.

This sparkling wine is vinified from the Pinot Noir varietal. It offers all the delicacy of red fruits and flowers with good structure at the mid palate and no tannins.

Marvellously complex and full-bodied, its bouquet is both fresh and lively with light floral notes. On the palate, our Brut Gold has a sumptuous, racy fruit character perfectly integrated with the wine's subtle brioche accents. The champagne's texture is deliciously creamy with great depth paired with a long, silky finish. Our Brut Gold is pressed from a perfectly balanced blend of Chardonnay, Pinot Noir and Pinot Meunier wine.

The colour is coppery amber and the nose offers heady spice aromas of nutmeg, cardamom, and vanilla, rounded out with caramel and citrus notes. On the palate the taste is warm and buttery with butterscotch notes and has a long, smooth cognac finish.

Our Merlot Les Jamelles is a very complex, rich, long and fat wine. With its dark colour, it displays aromas of crushed black fruits (blackberries, black currants, and cherries), jam and cooked fruits as well as smoky scents (peat) and spicy perfumes (cinnamon, thyme). This wine is round, rich and long-lasting on the palate with mature tannins on the finish. It is a well-balanced easy-drinking wine.

On the palate, this wine is complex, rich, long and fat. It displays aromas of crushed black fruits (blackberries, blackcurrants, cherries) and jam. The tannins are plump and well-integrated. Unlike many Pinot Noirs grown in the Pays d'Oc, this wine is not dominated by heaviness or an excessive over-ripeness.

Pale pink with lychee highlights. The succulent nose expresses intense grapefruit and red berry fruit aromas. On the palate, the attack is forthright and highly expressive, marked by the grapefruit notes found on the nose. Fresh, red berry fruit flavours then emerge on the close-knit, refined mid-palate, lingering on the fresh and elegant finish.

Chardonnay brings elegance, finesse, and minerality, Pinot Noir gives us body and structure, and Pinot Meunier brings weight and roundness to the wine. Beau Joie Brut is aged on lees for a minimum of 4 years. When Beau Joie Brut is disgorged, we add a very small amount of dosage to each bottle in order to highlight the fruit characteristics, while preserving lovely acidity and citrus notes.

Strawberry Rhubarb Melomel is fermented with local sourced strawberries and rhubarb and Manitoba honey producing a distinctive summer sensation.

Pinot Noir and Chardonnay grapes were vinified exclusively in barrels. Riddled and disgorged by hand. To the eye gold glints. Initial aromas of cherry and lemon mingle with quince and bergamot are followed by notes of hazelnut and almond, peach and mirabelle plum. The 2018 Cap De Faugeres is composed of 85% Merlot, 10% Cabernet Franc and 5% Cabernet Sauvignon. This wine opens with intense scents of preserved plums, kirsch, chocolate and menthol with hints of wood smoke and spices. The palate has a velvety texture with plenty of red fruit character.
