This melt-in-the-mouth malt has the most profound flavours crashing in like waves. At first, the delivery feels sublimely silky and studded with oak-like honey. Paul John XO is made from the famed Ugni Blanc and the rich Bangalore purple grape. The brandy is matured in specially selected, medium toasted new French limousine oak barrels. Sadashi is a Japanese whiskey with a golden colour. The nose has a woody scent with hints of vanilla and flowers. On the palate, the fresh wooden barrel dominates with a hint of nectar, pure malt, a little citrus, oak notes, Mizunara, coffee beans. Aging occurs in in ex-sherry and ex-bourbon casks, and then delicately finished in Mizunara oak casks. Mizunara is one of the rarest and most expensive types of oak in the world, and gives a delicate touch of spicy flavour and sandalwood to this remarkable spirit.

Initial aging has occurred in sherry, bourbon and Hogshead casks and then finished in Mizunara Oak. Aromas of honey, wisps of chocolate, dry grass and bonfire smoke. On the palate caramel, coffee, gently smoke, seaweed and vanilla. Long finish with notes of salted caramel.

In our pursuit of an authentically American single malt whiskey, we bring our signature five-malt barley bill together with new American oak casks. But just as traditional styles of single malt from Scotland emerged as a reflection of regions such as Islay and Speyside, so too does our American Oak stay true to the provenance of our Pacific Northwest home.

Yuri is the name of the local area of Honjo-shi and Masamune is an old term for Japanese sake. This sake is mellow and rustic and has a firm structure, its nutty and earthy notes are balanced by an underlying fruitiness.
