Vinho is fully matured in used American oak wine barrels that have been toasted and re-charred in a way that brings out fruity vanilla notes from the wood into the whisky overlaid on a delicate background of complex fruitiness. It has a complex and multi-dimensional background of pepper, spice, dates and other fruits, such as ripe melon and mango together with kiwi and a delicate blend of bursting citrus fruits. Three Swallow is made from a mash of malted and unmalted barley, then triple distilled in traditional copper pot stills. Matured in mainly 2nd and 3rd fill American oak casks. Sadashi is a Japanese whiskey with a golden colour. The nose has a woody scent with hints of vanilla and flowers. On the palate, the fresh wooden barrel dominates with a hint of nectar, pure malt, a little citrus, oak notes, Mizunara, coffee beans. Aging occurs in in ex-sherry and ex-bourbon casks, and then delicately finished in Mizunara oak casks. Mizunara is one of the rarest and most expensive types of oak in the world, and gives a delicate touch of spicy flavour and sandalwood to this remarkable spirit.

An ode to Donegal whiskeys of days gone by, the Legendary Silkie is a beautifully balanced blend of the finest double and triple distilled single malts and grain whiskeys. Non-chill filtered, and incredibly soft with a stunning natural sweetness. The 2% peated malt in the blend adds a kiss of peat smoke.

Nose: At first honeyed malt, nuts and dark chocolate followed by marzipan, all spice and fruits. Taste: Clean and mellow honey malt and then the taste complexity reveals itself - rich dried fruit, spices, nuts and sweet oils. Finish: A pleasant gentle wood with honey sweetness fading slowly.

To the nose, lemony citrus with hints of green apples, vanilla/sugar. The taste & the finish are bitter, bitter almond, malty oak. The finish fades to bitter notes of fresh oak. Young whiskey, light and straight forward. Would probably be a very good whiskey to incorporate marmalades recipes.

The early floral yet biscuit flavour reflects the grain whiskey, while the soft spicy notes can be attributed to the pot still whiskey in the blend. The citrus flavour is contributed by the malt. Finally notice the nutty or even marzipan note combined with distinctive vanilla in the finish imparted by the sherry and bourbon casks used in maturation.

The whisky is unique as it is cut with pure filtered desalinated ocean water. Aromas include caramel, vanilla, a touch of grain whisky, light honey, some floral and red apples. On the palate caramel, red apples, vanilla, hazelnut and a touch of chocolate.

Yuri is the name of the local area of Honjo-shi and Masamune is an old term for Japanese sake. This sake is mellow and rustic and has a firm structure, its nutty and earthy notes are balanced by an underlying fruitiness.
