A youthful wine will therefore exhibit well structured tannins that demands a complimenting food while a wine with greater than 4 years of age will begin to deliver nuances of flavour, texture and length that can only be achieved by making the wine in this traditional style.

This unoaked chardonnay is aged completely in stainless steel tanks. Light and fresh. Crisp notes of green apple, peach and citrus are found on the nose, with a lively acidity on the palate.

This is the unique environment in which merlot produces its vibrant, fully ripened varietal flavours. Essentially Oyster Bay Merlot is about elegance and intensity of fruit. This well-structured wine offers rich fruit flavours with hints of spice. The hero is always freshness of ripe fruit, spice and soft tannins on the palate. Enjoy with grilled steaks or gourmet sausages.

Here is a fresh style with good Pinot Noir character, which offers cherry and raspberry, white pepper and delicate spice with cedar box, carrot tops and the expected forest floor notes. It’s approachable and juicy with silky fruit, cocoa and fine spices lingering across the finish.

The key to the intense flavours and spicy aromas in this wine are the mature grapes and modern technology which allows for strict temperature control during fermentation: its gentle agitation of the wine extracts more colour and tannin from the skins, and the partial pressure this vessel is under during the time of fermentation allows higher concentration of fruit flavours to remain in the wine. Finally, this wine undergoes malolactic fermentation in the barrel room, which stabilizes its red colour and enhances its firm tannic finish. This Cabernet Franc is best served with pasta or red sauce, barbecued foods, roast beef or lamb.

You will find very ripe, plummy-sweet flavours and richness in this wine. Some would also call it a bistro style, "elbows-on-the-table" wine. Great with stews, red meat or tomato-based dishes.

Cellar selection pinot noir has a concentrated black cherry and dark berry aromas which follow through to the palate where dark berry fruit and cherry flavours are supported by soft tannins. This is a ripe and deeply coloured food wine, designed for early drinking but capable of cellaring for 3-5 years. Serve with hearty pastas, duck and New Zealand lamb.

Aged in french oak barrels for 11 months prior to final blending. Delicate aromas of maraschino cherry and cloves with an overlay of spices. The palate is fresh and vibrant with hints of vanilla and spice and a long lingering finish

Deep, ruby red in colour with aromas of black cherry, raspberry and red plums. The wine finishes soft and supple, with lingering berry flavours. Best enjoyed with flavoursome red meat dishes, such as spring lamb, duck, veal or game.

The barrel aged Chardonnay follows the guiding philosophy, oak should be to wine as seasoning is to food. Enough to add interest and complexity but not so much that it overwhelms.
