We charcoal mellow our whiskey drop by drop, then let it age in our own handcrafted barrels. Our Tennessee Sipping Whiskey is ready only when our tasters say it is. We use our senses, just like Jack Daniel himself did. In fact, more than a century later, our Tennessee Whiskey is still judged the same way. By the way it looks, it smells, and of course the way it tastes.

Bourbon barrel aging helps develop the full character of this whiskey. On the nose new pencil shavings, light rose petal, fresh rain on pine while the taste offers warm toasted oak, fresh peeled grapefruit, zesty wood spices, clove spiciness and a wisp of fresh mint.

Lively, aromatic, and grain-forward, with bright notes of red fruits, black currant, and roasted caraway seeds. Lots of depth on the palate, with baked raspberry and blackberry notes. It's hot and spicy, but water quells it without losing the spice explosion, red berry notes, and roasted rye. Warm and more mellow on the finish, with excellent integration of oak, coffee, and bitter chocolate. Spice and tartness, with ably balanced fruit.

Triple distilled, and aged in American oak Bourbon casks and Oloroso Sherry casks. Ripe and fruity aromas with luscious peach, dried apricot and tropical fruit notes with additional hints of orange blossom and vanilla fudge. Vanilla sweetness, granola, toasted almonds and honey, a little oak, digestive biscuits, apricots, and a hint of cocoa flavours fill the mouth. A lovely maltiness and sweet oak deliver a smooth finish.

This is a blend of 70% Single Malt and 30% Single Pot Still whiskeys. Zesty spice aromas, with black pepper and peach notes. The pot still spice comes through on the palate, with dark chocolate and bourbon oak notes. The finish lingers pleasantly with hints of oak and butterscotch.

To the nose, lemony citrus with hints of green apples, vanilla/sugar. The taste & the finish are bitter, bitter almond, malty oak. The finish fades to bitter notes of fresh oak. Young whiskey, light and straight forward. Would probably be a very good whiskey to incorporate marmalades recipes.

Clean, white pepper spice with faint, but discernible grilled sweet corn. Slightly sweet with creamy mouthfeel and cracked black pepper feel. Clean minerality with grain character evident and a faint hint of tinned sweet corn. Slightly hot black pepper finish, with faint lingering Brazil nuts.

In our pursuit of an authentically American single malt whiskey, we bring our signature five-malt barley bill together with new American oak casks. This combination produces a dramatically different whiskey from what is now commonplace and expected in the single malt category. But just as traditional styles of single malt from Scotland emerged as a reflection of regions such as Islay and Speyside, so too does our American Oak stay true to the provenance of our Pacific Northwest home.

Aromas of juicy plums marry with notes of herb and rich cedar in our elegant Woodbridge Cabernet Sauvignon. Deep flavours of blackberry and tobacco give this wine excellent balance, with oak aging adding a toasty, caramelized quality. With a smooth finish, this Cabernet Sauvignon is approachable and delicious with a variety of foods. Enjoy this wine with grilled lamb chops, barbecued ribs, or spicy Bolognese pasta.

A wonderful blend of Single Pot and Single Malt whiskey with aromas of apple and hints of vanilla. Gently spiced with ginger and orchard fruit flavours followed by a long and elegant finish that highlights notes of dark chocolate.
