A blend of straight rye whiskeys ranging in age from 4 - 10 years old. nose: Yellow plum jam on raspberry scones, blueberry turnover, cinnamon sugar graham crackers, cocoa-dusted orange peels, leather harvesting bag, dried white flowers, morning dew drops on lavender buds Taste: Raspberry jalapeno jelly on toasted brown bread, clove-infused orange slices, vanilla-poached dates, homemade applesauce with cinnamon sticks, fried dough with powdered sugar, mint tea Finish: Cherry fruit leather, ginger chews, stone cut oats with cream and golden raisins and fresh cracked pepper

First produced in Maryland in the 1890s, Pikesville Rye, along with the rest of the once-booming Maryland Rye industry, was shuttered by Prohibition. The brand re-emerged after Prohibition and became the last standing Maryland Rye, as the rest of the industry's production had ceased. The taste is dry and spicy, with honeyed rye and cloves. A soft vanilla and baking spices as the finish.

With a rye content of 95%, well past the 51% required for the category, we’ve recreated the classic American whiskey that ruled our glasses before Prohibition. Aromas and flavours include citrus, toasted oakn a bit of spice and mint.

Our bourbon has a rye content of 21%, giving it a light but distinct hint of spice. Additional aromas and flavours include: caramel, spice, over-ripe banana and cracked black pepper.

In our pursuit of an authentically American single malt whiskey, we bring our signature five-malt barley bill together with new American oak casks. This combination produces a dramatically different whiskey from what is now commonplace and expected in the single malt category. But just as traditional styles of single malt from Scotland emerged as a reflection of regions such as Islay and Speyside, so too does our American Oak stay true to the provenance of our Pacific Northwest home.
