The best agaves are selected after cultivation and cooked in traditional cone-shaped wood ovens. The wood is lit and volcanic rocks are placed on top of it in a pyramid shape, the oven is covered with cloth and earth and cooked for 3-5 days. Once cooked, the pinas are milled with a stone and kept in a wooden tub for fermentation. 400 Conejos Joven is double distilled and has slight smokiness on the palate.

An incredibly elegant and fruitful whisky that initially spent 18 years in a combination of refill casks and a finishing period of around 4-5 months in first-fill Pauillac wine casks. Following fermentation, the wine is aged in American oak barrels for 18 months. Cherry red colour with a thin terracotta edge, reflecting longer barrel age. This expression has spent up to 18 months finishing in Caribbean rum casks. The mingling of raw, spicy and earthy rye with the mellow sweetness of rum finishing creates an incomparably smooth whiskey. Naturalis Organic Shiraz is a delicious expression of South Australia’s warm climate and rich soil displaying aromas of blackberry, plum, and a hint of spice. On the palate, it is medium-bodied with flavours of dark fruit and lifted spice supported by soft tannins and balanced acidity.

Medium to full bodied palate weight, characterised by firm tannins and a savoury masculine finish. An ideal accompaniment to red meat and premium cuts of prime beef. Tignanello is made primarily with Sangiovese and a small percentage of Cabernet Sauvignon and Cabernet Franc. The 2018 is a deeply intense ruby red colour. On the nose, it's remarkably complex notes of ripe red fruits, black cherries and sour cherries that merge with sweet hints of vanilla, mint and white pepper. The palate is rich, elegant and well - balanced.

Tignanello 2019 is a deep ruby red colour. It's nose offers exceptional complexity with notes of red fruits, strawberries, pomegranate, apricots, peaches in syrup, vanilla, dried flowers, chocolate, nutmeg, coffee, caramel and Mediterranean herbs. On the palate silky, vibrant tannins, roasted coffee, bitter chocolate with a lengthy finish.

This organic Riesling shows great typicity with beautiful aromas of Citrus fruit and lively acidity.
